If you are like me, 3:15 PM – 5:15 PM is the quickest and slowest time of the day at the same time. I don’t know how time works like that… but it does.
I like to have my meals planned and mostly prepared so everyone (including myself) is not melting down at 4:30 PM. Sunday night I meal plan for the week and I place my online grocery order. Then during nap time/quiet time each day I prepare most of dinner. This helps me stay out of the kitchen from 3:15 – 5:15 PM and be present with my children.
During the week I make one “adult dinner” that might take more time prepping, and that Clinton and I will enjoy more. The rest of the dinners are usually very kid friendly and easy to prepare!
Here are a few GO-TO’s at our house for easy, kid-friendly meals that are perfect for a school night!
1. Fiesta-Lime Chicken Bowls (Crockpot)
2. Quiche and Muffins
3. Beef Basil Bowls over Rice
5. Asian Lettuce Wraps– over rice for the kids (Crockpot)
8. Short Rib Tacos (Crockpot)
As you can see – crockpot meals are the best! What are your favorite GO-TO Meals?
